'More spicy, more sexy’ - The food - Thailand and Laos Part 4

The instructions came fast and furious. Chop the sweet chili. Smash the garlic. Mash the paste. Add it to the chicken. Add the bird eye chili - two for mild, four for medium, six for Thai style. “More spicy, more sexy!” intoned our instructor Satang, who seemed like a cross between a DJ and a cross fit trainer.

 

"Another golden Buddha?" Thailand and Laos - Part 3

We visited a lot of Buddhist temples on the trip. And a bit like the teachings of the Buddha, it took a while before they made sense to me. I found myself impressed by the ornate decor and architectural splendor but at the same time not captivated by the experience. A few days into the trip, something began to click for me, as if I’d stopped trying to figure out the sound of one hand clapping and started to feel rather than trying to understand.

Creamy coconut broth, savory egg noodles, a spicy kick in the back of the pallet. Crunchy noodles and green onion on top. A squeeze of lime. This, in the universal language of food, meant “Welcome to Chiang Mai.” It was my first bowl of Khao Soi, the signature dish of northern Thailand.

Dear News Reader - Here's what one reporter would like from you

The tumultuous events of the last year have brought increased pressure from news readers for the mainstream media to provide reporting that's more nuanced, balanced, and in-depth. I've gotten quite a few broad exhortations via social media from people recommending things that reporters can do to ensure that events are covered fairly. I think this is great. But it might surprise you to know that from a reporter's perspective, there's also a lot that news consumers can do to promote the kind of journalism they want. La La Land turns jazz into an exotic Third World country

I actually liked the movie. But I was set up for disappointment because I had convinced myself that it was about jazz. It's more accurate to call La La Land a love story that uses jazz as an exotic backdrop much the way Hollywood movies use war-torn underdeveloped countries as the setting for stories about white people that have nothing to do with the country in question. La La Land was about jazz in the same way that Out of Africa was about Kenya.
